Happy Friday everyone!

On today’s agenda it is an afternoon with my sister and aunty. Lunch, shopping and coffee.

Breakfast – Organic Red Delicious apple and caramel rice cake

Lunch – Strawberry Mandarin Salad with Raspberry Vinaigrette

Snack – Large decaf coffee with cream and sugar twin

Supper -  Campbell’s Tomato Garden Vegetable soup with tuna on Organic 5 grain bread

Snack – McCain singles Cherry Cheesecake and 1/2 cup serving Vanilla ice cream


Today was a pretty basic day of eating. Watching calories and portions. Lunch was super awesome, best salad ever. It had fresh strawberries, mandarin slices, raisins, craisins and nuts.

The afternoon with my sister and auntie was a lot of fun. We laughed a lot and joked around! I am pooped for the day. Have a good night!


WORKOUT – 1.84 miles and legs

I am back to tracking calories again, not religiously, but I want to keep an eye on how much I am eating, since my weigh in and measurements yesterday, obviously I am doing something VERY wrong. So it is time to take more action. Usually I use a program to track, but since I don’t want to obsess too much, I am doing it the old school way, writing it down on paper. It might not be exact, but it gives me a good idea of where I am at for the day.

Here’s what I ate today:

Breakfast – 1 apple and 2 slices 7-grain toast with light butter

Lunch (post workout) – large caesar salad with hemp seeds


Snack – 1 navel orange and 1 apple

Supper – Vegetarian Bean Chili with cheese


Snack  – Small Oreo Cheesequake blizzard from Dairy Queen



I picked up something new and exciting today. It’s an Organic Sprout Growing Kit, I’ll be able to grow my own spouts inside, even in the winter, and since I can’t really have a garden, super pumped. Definitely will be more on that once I get it going growing!


Happy Hump Day everyone. How are you doing? I am doing great today, finally.

I kicked butt at the gym today, just wanted to start off with something positive! I did 2.9 miles and some strength training, I burned 500 calories in that hour of working out. Go me! I went and shovelled snow for about 20 minutes and burned over 100 calories. Wow!

This afternoon I did a little chocolate making. I made some peanut butter cups, with dark chocolate and natural PB. I also made ones with sweetened coconut in them.

Suppers agenda, sort of Italian feel, since yesterday was Indian:

Spaghetti Squash and fried Tofu. I have never really eaten tofu before and the one and only time I did it wasn’t very enjoyable, but I didn’t cook it up or add any flavours to it so that doesn’t count as much of an experience.

Spaghetti squash was pretty basic, topped with some tomato sauce and I added spices like oregano, basil and garlic, and I also added some mushrooms.

The tofu was fried with oil, garlic, paprika, salt and pepper. It was very tasty, didn’t seem like tofu at all.

During the preparation of supper I burnt myself with the oil I was cooking the tofu in, I ran it under cold water and then I am still keeping a cool wet cloth on it, but it still hurts really bad.

Because I feel like I’m living in the North Pole, its so cold here! Waking up this morning it was almost -40C. I did NOT want to get out of bed and I definitely didn’t want to go outside so that I could get to the gym. But I still did both. My truck almost didn’t start this morning, but she is a tough one. When I was leaving the gym she almost didn’t start again. I feel bad and now she will stay plugged in all day.

Back tracking here, last night for supper I made a Sweet & Sour stir fry with egg noodles, chicken breast and fresh veggies. It was delicious.

Today at the gym I did a total of 6.76 miles, Woo! Read my RUN page for details. After I got home from the gym I made a cup of Hot Chocolate and warmed up some leftovers, in my penguin bowl.

The afternoon was spent cleaning up the place, finishing all the dishes, washing the cats litter box and vacuuming. I made some Christmas rice krispie squares and made supper, which was a recipe from Kraft, I just basically looked off of it for the basic idea,  which was Chicken Pasta Skillet. It was definitely very tasty, I loved the cheese added at the end, it just brought it all together.


This picture is more appealing than the actual finish product, the tomato sauce just isn’t that photogenic.

So the finale for The Biggest Loser was on tonight, so exciting, yay for Danny C, I figured he would win it he is 190 pounds now after being 430 pounds! How crazy is that.

Supposed to be the same temperature waking up tomorrow, uhg, but I will still be going to the gym (unless my truck doesn’t start). If I can go to the gym when its -40C I can do anything!

This morning started out with a record! I was up and at the gym again, I just love the feeling of being active. I did my cardio, and I was able to run 6 minutes straight! I totally beat my 4 minutes from last week. I took it pretty easy today after that, I want to be able to go all week to the gym so I don’t want to burn myself out just after the first day. As soon as I got home I made a GM.


For lunch I made 1/2 grilled cheese sandwich, on my Snowman plate of course!


This morning started out pretty good, but now I am feeling unmotivated to do anything. Its rather depressing, I just don’t feel like moving or doing anything, and I have a few things that need to be done today. Worst feeling ever.


Most of the afternoon I just lazed on the couch, trying to find motivation. I lightly snacked on some Dark Chocolate covered cranberries and dried cranberries. I did a little bit of stretching while watching TV.

I bummed around the city for a bit, went by a couple health food stores, just to check out the situation, see what they had, see if there was anything new worth trying, didn’t find anything today. Then I went to get some propane for the BBQ and then I stopped off at the grocery store to get a few things. It felt nice to just get out and get some fresh air. It was +14C/57F today, pretty warm and beautiful for mid-November. But that still didn’t seem to bring me out of this mood. I snacked on the snap peas and made a couple homemade Peanut Butter Cups, using dark chocolate and natural peanut butter. By the way, they are to DIE for!

Tonight should be a good night though, new episode of House and Canada’s Worst Driver are both on. So it will be a lazy evening, curled up with my blanket on the couch. Hopefully this feeling of crappiness will subside soon.

194 Days Left!

Today I slept in, uhg, but I didn’t take long to get ready and head off to the gym. It was an intense cardio workout, ALOT of sweat! And then after I rewarded myself with a Green Monster.( Today mine consisted of about 2 cups spinach, 1 cup skim lactaid, 1 banana, and a couple handfuls of mixed fruit, I added more strawberries than anything that’s why its not really “green”. I feel so energized today from working out and having a huge vitamin boost from the Green Monster.


Daisy wanted in on some Green Monster action as well.



Supper was pretty basic today, Chicken Caesar wraps. But still exceptionally tasty and healthy. I had two of these.



I bought an Acorn Squash to try because they were all out of my favourite Butternut Squashes *sad face*. I baked it in the oven for over an hour with butter, brown sugar, and maple syrup. It had a good taste, but should be eaten fresh out of the oven and not heated up, I found this out by my own error. However never underestimate the squash!



For the evening we just hung out in the living room, watching Seinfeld, House and Canada’s Worst Driver. We also played some Mario Kart Wii.



Had a breakthrough idea tonight. I will be participating in my first marathon ever in 2010. It will be a 10k on May 30th, 2010.  It gives me lots of time to prepare and train, and it also gives me something to look forward to when I am doing my runs. Woo!

I found this recipe on KraftCanada’s website, and I figured I would give it a try Gluten Free style, turned out amazing!

Jello Coolwhip pie. My new favorite! So simple too.

1-1/4 cups Gluten Free (Kinnickinnick) Graham Crumbs

1/4 cup  non-hydrogenated margarine, melted

2/3 cup boiling water

1 pkg.  (10.1 g) JELL-O No Sugar Added Strawberry Jelly Powder

ice cubes

1/2 cup  cold water

3/4 thawed COOL WHIP Light Whipped Topping

To make the crust you mix the graham crumbs and melted margarine together, and then press it into the pie plate (9 inch)

Then in a bowl add the boiling water to the jelly powder and stir until it is all dissolved. The 1/2 cup cold water should be a in a measure cup and then you add enough ice to make it 1 cup, then you pour that into the jelly and stir until all the ice is melted. Then you can add 3/4 cup of Cool Whip and mix that until it is blended, pour mixture into your graham crust and refrigerate for 4 hours or until firm.

Then you can add Cool Whip on top before serving.

In my recipe I don’t think I blended the jelly mix and cool whip enough, because as you can see it turned out layered. But hey that looks awesome too! so maybe I should have said I made it do that.



Bean Chili

It’s been awhile since I’ve posted any food, today was a gloomy and rainy day here so I got busy in the kitchen.

My first recipe is Bean Chili, very simple recipe.

I used 1 large can of bean medley, 1 large can of kidney beans, 1 can of crushed tomatoes and 28g of chili powder dissolved in 1/4 cup of water. Bring it to a boil and simmer for about 15minutes or until it reaches your desired thickness. Top with cheese and serve. I added half a can of sliced mushrooms, one thing I did forget was to add corn to it.



Banana Bread

I missed the smell of moms banana bread, and having gone g-free.. I couldn’t have it like I used to. Today I did some recipe searching and modifying. Turned out fabulous.

Instead of your regular All-purpose flour, I used Bob’s Red Mill gluten free all-purpose baking flour and splenda instead of sugar. You can use any recipe and modify it and usually have a good turn out, sometimes not but its a risk sometimes you just have to take.


2/3 cup sugar (I used splenda)

1/3 cup soft margarine

2 eggs, unbeaten

1 and 3/4 cup flour (I used Bob’s Red Mill gluten free all-purpose flour)

2 tsp baking powder

1/4 tsp baking soda

1/2 tsp salt

1 cup mashed bananas

Preheat over to 350F. Mix sugar, margarine and eggs 3 minutes. Add flour, BP, BS, salt and bananas. Bake for about 50minutes.






Baking Bread

So tonight was definately another experimental baking thing. I bought some Gluten-Free Pantry French Bread & Pizza mix. I wanted to make some breadsticks for supper, so I followed the instructions, and topped with oregano, garlic powder and italian dressing. Smelled so yummy coming out of the oven, they were very thick breadsticks, so next time I could probably split it up between 2 pans. This mix was very soft and fluffy, I am impressed with the quality of it for gluten free bread.





I heart Pesto

Definately a filling pasta meal!

What you need is some brown rice pasta, any shape, I chose Fusili. Boil it, drain and rinse. Then I added some basil pesto and some caesar dressing to taste. Turned out exceptional, I am so full!

Top with cheese or veggies and enjoy! I know I didpasta



Blueberry Waffles

This morning for breakfast, I really didn’t feel like making something that took a lot of work. Good thing I bought some frozen waffles that you can just pop in the toaster, from Van’s, they are delicious gluten free waffles, and you can top them any way you like. This morning I decided to add a little bit of cool-whip light.

Excellent Brand to use, highly recommended.




Rhubarb Bake

So I was experimenting today with a dessert, mom gave me some rhubarb today, and some saskatoon berries for perogies I want to make later. And I was thinking about making a rhubarb crisp, but don’t have any safe oatmeal, and so she said that she always uses pancake mix. I use Kinnickinnick Pancake mix, its great.

I threw the rhubarb in my dish with about five strawberries, all of which are frozen. I added some splenda to make it sweet, and a tiny bit of corn starch, wasn’t sure how much, and i whipped up the pancake mix just like the instructions say on the bag and poured it into the dish on top of the frozen fruits.. or vegetables? Hmm is rhubarb a fruit or veggie? Anyways! then I put it into the oven uncovered, probably for a total time of 40minutes,I just kept an eye on it until I thought it was ready.

Definately an experimental dessert, it turned out very tasty, seemed to take awhile to become less soupy, but the final outcome surprisingly stuck together quite well. Might need to either add more of the mix or less of the solid next time though. But for my first time, can’t complain!




Crash Hot Potatoes

Sitting around, feeling hungry, what shall I eat?

I had a craving for potatoes, but not just any ol’ potatoe. I had just bought some mini red potatoes and figured I would whip up something tasty.

I boiled 8 little potatoes, only 70 calories for four. Once they were cooked, I layed them out on a baking sheet and squished them with a potatoe masher, lightly brush on some cooking oil, salt, pepper and chopped green onion, and baked for about 10 minutes at 400F. And voila! what a tasty snack, it can be prepared so many different ways too. And fairly low in calories, and of course… gluten free!potatoe
